21-Day Weight -Loss Plan (week3)
WEEK 3 AND BEYOND – ACHIEVING YOUR TARGETS
By days 16 to 21 you will begin to feel the benefits of being on the diet. Your skin will have a healthy glow, your clothes will start to fit better and you will be getting used to using and portion sizes. Most people by this stage are feeling so good that they are contemplating adopting the low-GL principles for life, not justfor three weeks.
DAY 1
Lunch Chicken, sun-blush tomato and pine nut salad
Dinner King prawn pilaff with steamed vegetables
Snacks Apple plus a handful of cashew nuts/2 rough oatcakes with reduced-fat cream cheese
DAY 2
Breakfast One-minute muesli
Lunch Hummus and roasted pepper wrap
Dinner Steamed salmon with stir-fried shiitake mushrooms, brown basmati rice and wilted spinach
Snacks Celery and 1/2 carrot made into crudites with cottage cheese/2 rough oatcakes spread with tuna and guacamole or salsa
DAY 3
Breakfast Toast and nut butter
Dinner Chicken with aubergine and peppers, with wholemeal pasta and a green salad
Snacks Apple plus 2 tsp sunflower seeds/marzipan truffles (see Easy Desserts)
DAY 4
Lunch Deli-style pastrami open rye sandwich
Dinner Warm tomato and olive mixed-pulse salad with a green salad
Snacks Slice of pumpernickel-style rye bread with nut butter/celery and radish crudités with guacamole
DAY 5
Breakfast Porridge
Lunch Goat’s cheese, pear and pecan salad
Dinner Hot-smoked fish with a lemon and caper dressing, with salad and flageolet beans, followed by ten-minute fruit crumble
Snacks Apple plus 2 tsp walnuts/fruit and yogurt smoothie
DAY 6
Breakfast melette in pitta bread
Lunch Salade nicoise
Dinner Soya and sesame tofu steam-fry with brown basmati rice
Snacks Pear plus 2 tsp pecan nuts/2 rough oatcakes with nut butter
DAY 7
Breakfast Fruit salad with yogurt and seeds
Lunch Chicken with cherry tomatoes and creme fraiche (see Main Meals)
Dinner Chestnut and butterbean soup
Snacks Slice of pumpernickel-style rye bread with hummus/raspberries with sweet tahini sauce (see Easy Desserts)
Drinks per day Unlimited water, herbal teas and coffee alternatives, plus 1 glass of diluted juice
