Tofu(Soybean Curd), the Food Products From Soybeans
Also known as soybean curd, tofu is becoming a popular staple in this country. This completely flavorless, cheese like food is made by adding a coagulant to fresh, hot soymilk, which curdles the liquid. The curd then is formed into cubes. Typically, the curdling ingredient is either niggard, a substance found in sea salt, or calcium sulfate, a natural mineral. Tofu made with calcium sulfate is exceptionally high in calcium, with as much as 130 milligrams in a 4-ounce serving. Acidic foods such as lemon juice or vinegar also can create curds.
Tofu is a significant source of protein, and it has ample amounts of B vitamins, potassium, and iron. It is cholesterol free and low in calories, carbohydrates, saturated fat, and sodium. And it is easily chewed and digested. Tofu makes an excellent food for vegetarians, infants, growing children, older adults, people on sodium-restricted diets, and anyone with a sensitive stomach.
Tofu’s blandness is also its greatest asset In recipes, it can become whatever flavor you want. Add it to chili and it tastes like chili; mix it with cocoa and a sweetener and it doubles for chocolate pudding or pie filling. No other food can substitute as tofu can for mayonnaise, sour cream, cream cheese, dips, low-calorie dressings, meat, eggs, cheese, sandwich spreads, and much more.
